Ingredients

  • 2 sheets Puff Pastry (thawed)
  • 2 cups Fresh Spinach (chopped)
  • 1 cup Ricotta Cheese (or cottage cheese)
  • 1/2 cup Grated Parmesan Cheese (or Pecorino Romano)
  • 1 Egg (beaten, for egg wash)
  • 1 tsp Garlic Powder
  • Salt & Pepper (to taste)
  • 1 tbsp Olive Oil (optional)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat and sauté the chopped spinach until wilted. Let it cool slightly before mixing it with ricotta, Parmesan, garlic powder, salt, and pepper until smooth.
  3. Roll out the thawed puff pastry on a floured surface and cut into squares.
  4. Place 1–2 tablespoons of the spinach mixture in the center of each square. Fold them into triangles or rectangles and seal edges with a fork.
  5. Brush tops with beaten egg for a golden finish.
  6. Bake for 20–25 minutes until puffed up and golden brown.
  7. Let cool for 5 minutes before serving warm.
