- 2 tbsp cornstarch
- 1 tbsp baking powder
- 1 tsp salt
- 1 tsp garlic powder
- ¼ tsp black pepper
- 1 ¾ cups seltzer water, extra cold
- ½ cup maple syrup, or agave nectar (reduce to ¼ cup if sensitive to sweetness)
- 6 tbsp soy sauce, use low-sodium if sensitive to salt
- ¼ cup light brown sugar
- 3 tbsp minced garlic (2-3 cloves)
- 2 tbsp minced fresh ginger
- 2 tbsp apple cider vinegar
- 1 tbsp toasted sesame oil
Instructions
- Prepare the cauliflower by cutting it into bite-sized florets and drying them thoroughly.
- In a mixing bowl, combine gluten-free flour blend, cornstarch, baking powder, garlic powder, salt, and black pepper. In another bowl, whisk together seltzer water and apple cider vinegar before combining with the dry ingredients to form a smooth batter.
- Preheat your air fryer to 375°F (190°C). Coat cauliflower florets in the batter and arrange them in the air fryer basket in a single layer.
- Air fry for 15-20 minutes, shaking the basket every 5-7 minutes until golden brown.
- Meanwhile, prepare the sauce by sautéing minced garlic and ginger in toasted sesame oil before adding maple syrup, soy sauce, light brown sugar, and whisking until thickened.
- Toss air-fried cauliflower in the warm sauce and serve immediately.
