  • 8 day-old croissants
  • 1 cup almond flour
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup unsalted butter, room temperature
  • ½ teaspoon almond extract
  • 2 eggs, room temperature
  • 1 cup (240 ml) water
  • ¼ cup (50 g) granulated sugar for simple syrup
  • 4 tablespoons (60 ml) vanilla extract (alcohol-free)
  • 1 teaspoon vanilla extract
  • ¼ cup sliced almonds for topping (optional)
  • ¼ cup (30 g) powdered sugar for topping (optional)


Instructions

  1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a saucepan over medium heat, combine 1 cup water and ¼ cup granulated sugar until dissolved to make simple syrup. Stir in 4 tablespoons of alcohol-free vanilla extract and set aside to cool.
  3. In a stand mixer, blend together 1 cup almond flour, 2 tablespoons all-purpose flour, ½ teaspoon salt, and ½ cup granulated sugar. Gradually incorporate the room temperature butter, eggs, and ½ teaspoon almond extract until light and fluffy.
  4. Slice each croissant in half lengthwise and brush the insides with cooled simple syrup.
  5. Spread about 2 tablespoons of the almond filling on each bottom half before placing the top back on. Brush more syrup on top and add additional filling with sliced almonds if desired.
  6. Bake for 15-18 minutes until golden brown. Allow them to cool slightly before serving.
