  • ½ cup granulated sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 2¼ cups all-purpose flour
  • ½ teaspoon salt
  • ¼ cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon
  • ½ cup apple butter


Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy. Add egg yolks and vanilla; mix until combined.
  3. Gradually add flour and salt, mixing on low speed until just combined. Chill the dough for about 30 minutes.
  4. Roll chilled dough into balls, then roll in a mixture of cinnamon and sugar. Place on prepared baking sheets with space between each cookie.
  5. Using your thumb or spoon handle, create an indentation in each cookie and fill with apple butter.
  6. Bake for 12-14 minutes or until edges are lightly golden. Cool on wire racks before serving.
