  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3/4 cup buttermilk
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar
  • 1 tablespoon cinnamon


Instructions

  1. Preheat the oven to 350°F (180°C). Grease and line a 9 x 4 inch baking tin with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gradually mix in the dry ingredients with buttermilk until just combined.
  5. Toss diced apples with brown sugar and cinnamon in another bowl.
  6. Layer half of the batter into the tin, followed by half of the apple mixture. Repeat layering and swirl gently.
  7. Bake for 55-65 minutes or until a toothpick comes out clean. Cover with foil after 30 minutes to prevent over-browning.
  8. Cool in the pan for 10 minutes before transferring to a cooling rack.
