  • 1 cup (200g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 medium apple, peeled and finely diced
  • 2 tbsp (25g) granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in finely diced apple evenly throughout the batter.
  7. Spread the batter into the prepared pan and smooth the top.
  8. Mix granulated sugar and cinnamon for the topping; sprinkle over the batter.
  9. Bake for 25–30 minutes until edges are golden brown and a toothpick comes out clean.
  10. Allow to cool completely before cutting into squares.
