  • 2 ripe avocados
  • 4 thick slices of sourdough or multigrain bread
  • 4 oz smoked salmon
  • 1/3 cup crème fraîche
  • 1 tbsp fresh lemon juice
  • Zest from one lemon
  • 1 tbsp chopped fresh dill
  • 2 spring onions (scallions)
  • 2 tbsp capers (chopped)
  • 2 tbsp extra-virgin olive oil
  • Salt and freshly ground black pepper


Instructions

  1. Brush both sides of the bread slices with olive oil. Heat a skillet or grill pan over medium-high heat. Grill each slice for about 2 minutes per side until golden brown.
  2. In a mixing bowl, combine crème fraîche, lemon juice, lemon zest, dill, spring onions, and capers. Season with salt and pepper to taste.
  3. Spread mashed avocado generously on each slice of toasted bread. Top with smoked salmon and finish with the lemon-herb crème fraîche mixture.
