Ingredients
- 2 ripe avocados
- 4 thick slices of sourdough or multigrain bread
- 4 oz smoked salmon
- 1/3 cup crème fraîche
- 1 tbsp fresh lemon juice
- Zest from one lemon
- 1 tbsp chopped fresh dill
- 2 spring onions (scallions)
- 2 tbsp capers (chopped)
- 2 tbsp extra-virgin olive oil
- Salt and freshly ground black pepper
Instructions
- Brush both sides of the bread slices with olive oil. Heat a skillet or grill pan over medium-high heat. Grill each slice for about 2 minutes per side until golden brown.
