Description

Banana Peanut Butter Oat Bars are a delightful and nutritious snack that everyone can enjoy. Ingredients

  • 2 medium ripe bananas
  • 1/2 cup natural creamy peanut butter
  • 1/2 cup pure maple syrup
  • 3 Tbsp coconut oil (melted) or avocado oil
  • 2 cups old-fashioned rolled oats
  • 1/2 cup chocolate chips (or cacao nibs/dried fruit for vegan)


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8" baking dish with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir in peanut butter, maple syrup, coconut oil, and mix until combined.
  4. Add rolled oats and chocolate chips (or alternatives), stir until well mixed.
  5. Pour the mixture into the prepared baking dish and bake for 28 to 32 minutes until set.
  6. Allow to cool in the pan for about 30 minutes before lifting out and slicing into bars.
