  • 1/2 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup mashed ripe banana (about 2 and 1/2 medium bananas)
  • 1 cup all-purpose flour
  • 1/2 cup old-fashioned oats (blended into a powder)
  • 1 teaspoon baking soda
  • 1 & 1/2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream
  • 1/4 teaspoon cinnamon (optional)
  • 1/8 teaspoon nutmeg (optional)
  • 1/8 teaspoon cloves (optional)
  • 1/2 to 3/4 cup toasted pecans or walnuts (optional)


Instructions

  1. Preheat oven to 350°F and prepare a loaf pan with nonstick spray or parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Add eggs and vanilla; mix well.
  4. Mash bananas in a separate bowl and stir into the butter mixture until combined.
  5. Blend oats into flour and add to the wet mixture along with all-purpose flour.
  6. Combine baking soda, baking powder, salt, and optional spices; gently fold into the mixture.
  7. Fold in sour cream until smooth; add nuts if desired.
  8. Pour batter into prepared loaf pan and smooth the top.
  9. Bake for 55–65 minutes until a toothpick comes out clean from the center.
  10. Cool on a rack before slicing.
