  • ⅓ cup (38g) confectioners' sugar
  • ¼ teaspoon kosher salt
  • 8 tablespoons unsalted butter (cut into cubes and chilled)
  • ¼ cup lemon zest + ½ cup juice (from 4 lemons)
  • 1 large egg + 5 large yolks
  • ⅓ cup honey
  • Kosher salt
  • 4 tablespoons unsalted butter (cut into 4 pieces and chilled)
  • 2 tablespoons heavy cream
  • 10 ounces (2 cups) blueberries
  • 2 tablespoons cornstarch
  • ¼ cup honey


Instructions

  1. Preheat your oven to 350°F (175°C). Prepare the tart crust by mixing flour, confectioners' sugar, and salt. Cut in cold butter until crumbly. Combine egg yolk with cream and vanilla; mix into dry ingredients. Press into a tart pan and chill.
  2. Make the lemon curd by heating lemon zest and juice with honey in a saucepan. Temper with whisked eggs before cooking until thickened. Add butter until melted.
  3. For the blueberry filling, cook blueberries with honey until bursting; thicken with cornstarch mixed with water.
  4. Assemble by pouring lemon curd into the crust followed by blueberry filling. Bake for 20-25 minutes until set.
