- 2 tablespoons cornstarch

Instructions
- Preheat your oven to 350°F (175°C). Prepare the tart crust by mixing flour, confectioners' sugar, and salt. Cut in cold butter until crumbly. Combine egg yolk with cream and vanilla; mix into dry ingredients. Press into a tart pan and chill.
- Make the lemon curd by heating lemon zest and juice with honey in a saucepan. Temper with whisked eggs before cooking until thickened. Add butter until melted.
- For the blueberry filling, cook blueberries with honey until bursting; thicken with cornstarch mixed with water.
- Assemble by pouring lemon curd into the crust followed by blueberry filling. Bake for 20-25 minutes until set.
