  • 5 oz baby spinach, washed and stems removed
  • 1/2 pint blueberries, washed
  • 1 medium green apple, thinly sliced or diced
  • 1/4 C feta cheese crumbles or alternative
  • 2.25 oz slivered almonds
  • 1/3 C mayonnaise
  • 1/4 C orange juice
  • 2 tsp white apple vinegar
  • 2 tsp poppy seeds
  • 1 tsp lemon juice
  • 1 tsp sugar
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 tsp ground white pepper
  • 1/8 tsp garlic powder


Instructions

  1. Wash baby spinach and blueberries thoroughly. Remove stems from the spinach and slice the green apple.
  2. In a mixing bowl, whisk together mayonnaise, orange juice, white apple vinegar, poppy seeds, lemon juice, sugar, ground ginger, salt, ground white pepper, and garlic powder until smooth.
  3. In a large serving bowl, combine spinach, blueberries, sliced green apple, feta cheese (or alternative), and slivered almonds.
  4. Drizzle the dressing over the salad and gently toss until well coated. Serve immediately for optimal freshness.
