- 1/2 teaspoon garlic powder
- Salt & pepper (to taste)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 medium onion (chopped)
- 3/4 cup chicken broth (preferably low sodium)
- 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
- Optional: 1-2 tablespoons chopped parsley
Instructions
- Cut the chicken breasts in half lengthwise to create four thinner pieces. Season both sides with garlic powder, salt, and pepper.
- Heat olive oil and butter in a skillet over medium-high heat. Cook the seasoned chicken for about 5-6 minutes on each side until fully cooked; transfer to a plate.
- In the same skillet, sauté chopped onions for about 5 minutes or until softened and lightly browned.
- Pour in the chicken broth and add softened Boursin cheese; stir until smooth and let bubble for about 5 minutes.
- Return the cooked chicken to the skillet along with any juices from the plate; warm through for an additional couple of minutes.
- Adjust seasoning as needed and serve immediately over rice or pasta.
