Description

Ingredients

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth (preferably low sodium)
  • 1 (5.2 oz) package Boursin Fine Herbs & Garlic cheese (softened)
  • Optional: 1-2 tablespoons chopped parsley


Instructions

  1. Cut the chicken breasts in half lengthwise to create four thinner pieces. Season both sides with garlic powder, salt, and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Cook the seasoned chicken for about 5-6 minutes on each side until fully cooked; transfer to a plate.
  3. In the same skillet, sauté chopped onions for about 5 minutes or until softened and lightly browned.
  4. Pour in the chicken broth and add softened Boursin cheese; stir until smooth and let bubble for about 5 minutes.
  5. Return the cooked chicken to the skillet along with any juices from the plate; warm through for an additional couple of minutes.
  6. Adjust seasoning as needed and serve immediately over rice or pasta.
