- 1 tbsp apple cider or white vinegar
- 1 whole egg (whisked)
- 3 cups sliced fresh peaches
- 3 cups hulled and quartered fresh strawberries
- ¼ cup granulated sugar
- ¼ cup + 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp lemon zest
- ¼ tsp fine sea salt
- 2-3 tbsp Turbinado sugar (optional)
Instructions
- Prepare the crust by combining flour and salt in a mixing bowl. Cut in cold butter until crumbly, then stir in cold water and vinegar. Chill the dough for at least 30 minutes.
- Brown the butter by melting it in a saucepan over medium heat until golden brown and nutty, then let cool.
- Roll out half of the chilled dough into a circle and place it in a pie dish.
- In a large bowl, mix sliced peaches, strawberries, sugar, cornstarch, lemon juice, and salt for the filling.
- Pour the fruit mixture into the prepared crust and cover with the remaining rolled-out dough, cutting slits for steam to escape.
