Instructions

  1. Preheat your oven to 300°F and prepare two 9×5-inch loaf pans by buttering them and lining with parchment paper.
  2. In a mixing bowl, sift or whisk together the flour, salt, baking powder, and baking soda. If using pecans, add them at this stage.
  3. In another bowl, cream the sugar and butter until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the mashed bananas until fully combined.
  4. Gradually add the dry ingredients to the wet mixture while alternating with buttermilk. Mix until just combined; avoid overmixing.
  5. Pour the batter evenly into prepared pans and bake for about one hour or until golden brown and a toothpick inserted in the center comes out clean. Allow to cool completely before slicing.
