  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream (or half and half)
  • 2 teaspoons Cajun seasoning
  • 10 oz. Rotel diced tomatoes with green chilies
  • ¾ cup cheddar jack cheese (shredded)
  • Fresh cilantro and lime wedges for garnish
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 3 tablespoons flour
  • 1-2 tablespoons olive oil (or avocado oil)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)


Instructions

  1. Season chicken breasts with Cajun seasoning and lightly coat with flour.
  2. Heat olive oil in a skillet over medium-high heat; cook chicken until golden brown, about 5–7 minutes per side. Remove from skillet.
  3. In the same skillet, melt butter; sauté garlic until fragrant.
  4. Stir in chicken broth, heavy cream, honey, hot sauce, remaining Cajun seasoning, and diced tomatoes (with reserved juice). Simmer until thickened.
  5. Add shredded cheese; return chicken to skillet to soak in flavors for a few minutes.
  6. Drizzle lime juice before serving and garnish with cilantro.
