For the Chicken:
500 g boneless, skinless chicken thighs
2 tablespoons soy sauce
1 tablespoon sesame oil
3 cloves garlic, minced
1-inch piece ginger, minced
1 tablespoon brown sugar
For the Broth:
3 cups chicken broth
1 tablespoon rice vinegar
1 tablespoon cornstarch mixed with 2 tablespoons water
For the Rice:
1 cup jasmine rice
2 cups water
For Garnish:
2 green onions, sliced
Salt and pepper, to taste
Instructions
- In a bowl, combine the chicken thighs with soy sauce, sesame oil, garlic, ginger, and brown sugar. Mix well and let marinate for at least 15–20 minutes.
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender. Remove from heat and let sit covered for 5 minutes.
- Heat a large pan over medium heat and cook the marinated chicken until browned and cooked through, about 6–8 minutes.
- Pour in the chicken broth and rice vinegar, bringing the mixture to a simmer.
- Stir in the cornstarch slurry and cook for 2–3 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Serve the chicken over the cooked jasmine rice.
- Garnish with sliced green onions and serve hot.
