  • 1 Tbsp butter or olive oil
  • 1 medium onion, diced
  • 1 garlic clove, minced
  • 1 celery stick, chopped
  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 ½ cups low-sodium vegetable broth
  • 1 tsp Italian herbs
  • ¼ tsp dried thyme
  • ¼ tsp dried parsley
  • ⅛ tsp black pepper
  • ½ tsp fine salt


Instructions

  1. In a large pot over medium heat, melt butter or olive oil. Sauté onion with a pinch of salt and pepper until soft (about 5 minutes). Add garlic and cook for another minute.
  2. Stir in carrots, potatoes, celery, herbs, salt, and pepper; cook for 2-3 minutes.
  3. Pour in vegetable broth, bring to a boil then reduce heat to simmer for about 20 minutes.
  4. Once cooked, blend part of the soup until smooth using a stand blender or hand blender (optional).
  5. Return blended soup to pot; stir well and adjust seasoning if needed. Serve hot with fresh herbs on top.
