Ingredients

  • 2 heads of romaine lettuce (washed, dried, chopped)
  • 3 celery stalks (chopped)
  • 1/2 cup red onion (thinly sliced)
  • 1 cup sharp cheddar cheese (chopped into chunks)
  • 2 gala apples (thinly sliced)
  • Freshly cracked black pepper
  • 1/4 cup extra virgin olive oil
  • Juice from 1/2 lemon
  • 1 tablespoon dijon mustard
  • 2 tablespoons red apple vinegar
  • 1/2 teaspoon oregano
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon salt


Instructions

  1. In a large mixing bowl, combine the chopped romaine lettuce, celery, red onion, cheddar cheese chunks, and sliced apples. Add freshly cracked black pepper to taste and toss well.
  2. In a mason jar or salad dressing container, combine olive oil, lemon juice, dijon mustard, red apple vinegar, oregano, salt, and black pepper. Secure the lid and shake until well combined.
  3. Pour half of the dressing over the salad mixture and toss until evenly coated. Taste and add more dressing if desired.
  4. Serve immediately or refrigerate for up to 3-4 days.
