- 2 heads of romaine lettuce (washed, dried, chopped)
- 3 celery stalks (chopped)
- 1/2 cup red onion (thinly sliced)
- 1 cup sharp cheddar cheese (chopped into chunks)
- 2 gala apples (thinly sliced)
- Freshly cracked black pepper
- 1/4 cup extra virgin olive oil
- Juice from 1/2 lemon
- 1 tablespoon dijon mustard
- 2 tablespoons red apple vinegar
- 1/2 teaspoon oregano
- 1/8 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- In a large mixing bowl, combine the chopped romaine lettuce, celery, red onion, cheddar cheese chunks, and sliced apples. Add freshly cracked black pepper to taste and toss well.
- In a mason jar or salad dressing container, combine olive oil, lemon juice, dijon mustard, red apple vinegar, oregano, salt, and black pepper. Secure the lid and shake until well combined.
- Pour half of the dressing over the salad mixture and toss until evenly coated. Taste and add more dressing if desired.
- Serve immediately or refrigerate for up to 3-4 days.
