  • 12 oz cheese tortellini
  • 1 lb thinly sliced steak (sirloin or ribeye)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 ½ cups heavy cream
  • 1 cup shredded provolone cheese
  • ½ cup shredded mozzarella cheese


Instructions

  1. Cook the cheese tortellini in boiling salted water according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium-high heat, heat olive oil and butter until melted. Add the sliced steak and cook until browned on both sides (about 3-5 minutes). Remove from skillet.
  3. In the same skillet, sauté diced onion and garlic until softened (about 2-3 minutes). Sprinkle flour over the mixture and stir well.
  4. Gradually whisk in beef broth until smooth; add heavy cream and continue stirring until slightly thickened.
  5. Return cooked steak to the skillet and stir in provolone and mozzarella cheese until melted. Fold in cooked tortellini gently until coated.
