  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups cooked chicken, chopped
  • 2 cups broccoli florets, chopped small
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese


Instructions

  1. In a large skillet over medium heat, warm the olive oil and butter together until the butter is melted and starts to foam just a little. Toss in the diced onion and sauté until it’s soft and translucent — about 3–4 minutes.
  2. Stir in the minced garlic and orzo pasta. Let it toast slightly in the butter and oil mixture for 2–3 minutes, stirring often.
  3. Toss in the chopped cooked chicken and small broccoli florets. Stir to combine.
  4. Slowly pour in the chicken broth and milk. Stir in the salt and pepper. Bring to a gentle simmer, then reduce the heat to low. Cover the skillet and cook for about 10–12 minutes.
  5. Once the orzo is cooked and creamy, stir in the shredded cheddar and Parmesan cheese until melted.
  6. Serve warm, garnished with extra cheese if desired.
