  • 4 slices of chicken
  • 4 slices of Swiss cheese
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko or regular)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup milk
  • 1 tsp Dijon mustard
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to about ¼ inch thick.
  3. Layer each breast with a slice of chicken and Swiss cheese, then roll tightly and secure with toothpicks.
  4. Dredge each roll in seasoned flour, dip in beaten eggs, and coat with breadcrumbs.
  5. In a skillet, heat olive oil and butter over medium heat; sear each roll until golden brown (2–3 minutes per side).
  6. Transfer to a baking dish and bake uncovered for 20–25 minutes until internal temperature reaches 165°F (74°C).
  7. For the sauce, melt butter in a saucepan, whisk in flour, milk, Dijon mustard, and Parmesan cheese until creamy.
  8. Serve sliced rolls drizzled with sauce; garnish with fresh parsley if desired.
