- ½ cup chicken broth
- 2 tablespoons lemon juice

Instructions
- Season chicken breasts generously with salt, black pepper, and paprika on both sides.
- In a large skillet, heat olive oil over medium heat. Sear the seasoned chicken breasts for 5–6 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, lower the heat. Add butter and minced garlic. Sauté for 1–2 minutes until fragrant but not browned.
- Pour in chicken broth and lemon juice into the skillet. Scrape the bottom to deglaze and add lemon zest. Simmer for 3–4 minutes.
- Return the seared chicken to the pan. Spoon sauce over it and allow it to simmer for an additional 2–3 minutes.
- In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté briefly. Stir in white rice and toast for about 1 minute until lightly golden.
- Add chicken broth to the rice mixture. Bring to a boil then reduce heat. Cover and simmer for about 15 minutes or until rice is tender.
- Once cooked, remove from heat. Stir in grated parmesan cheese and chopped parsley until well combined.
- Serve seared chicken over a bed of garlic parmesan rice. Spoon extra scampi sauce on top as desired. Garnish with parsley and red pepper flakes if using.
