  • 4-5 cloves garlic, minced
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white apple vinegar or vegetable broth
  • 1 (28-ounce) can crushed tomatoes
  • 5 ounces fresh baby spinach
  • 1/2 cup grated Parmesan cheese (or plant-based alternative)


Instructions

  1. Cook the pasta in heavily salted boiling water according to package directions until al dente. Reserve about 1.5 cups of pasta water before draining.
  2. In a deep skillet, heat olive oil over medium heat. Sauté onion for 5-7 minutes until translucent, then add garlic, oregano, and red pepper flakes for another minute.
  3. Deglaze the skillet with dry white apple vinegar, scraping up any browned bits. Simmer until reduced by half.
  4. Add chickpeas and crushed tomatoes; stir in sugar, salt, and pepper. Cover and simmer on low for 10-15 minutes.
  5. Stir in spinach until wilted; combine with drained pasta and Parmesan cheese while gradually adding reserved pasta water to create a creamy sauce.
