Ingredients
- 2 cans chickpeas (drained and rinsed)
- 1 piece English cucumber (diced)
- 8 oz feta cheese (crumbled)
- 1/2 cup red onion (diced)
- 1/2 cup olive oil
- 2 tbsp lemon juice (fresh)
- 1 tbsp lemon zest
- 1/4 cup red apple vinegar
- 1 tsp Dijon mustard
- 1/4 cup fresh herbs (OPTIONAL – chopped basil, dill, mint)
- 1 tsp dried oregano
- 1 tsp garlic
- 1 tsp dried parsley
- 1/4 tsp salt (to taste)
- 1/8 tsp black pepper (to taste)
Instructions
- In a mixing bowl or mason jar, combine olive oil, lemon juice, lemon zest, red apple vinegar, Dijon mustard, garlic, oregano, parsley, salt, and pepper. Whisk or shake until well mixed.
- In the same bowl, add drained chickpeas to the dressing mixture. Then stir in diced cucumber and red onion.
- Gently fold in crumbled feta cheese and any chosen fresh herbs.
- Cover the salad and chill in the refrigerator for at least two hours before serving to meld flavors.
