  • 2 cups cooked white rice (preferably day-old)
  • 1-2 tbsp homemade chili oil
  • 1/2 tsp salt (adjust to taste)
  • 1 head garlic (peeled and minced)
  • Fresh cilantro (chopped)


Instructions

  1. Break apart any large chunks of day-old rice into smaller pieces.
  2. Heat a large wok or non-stick pan over medium heat and add chili oil, mixing in salt.
  3. Add minced garlic and cook until golden brown, being careful not to burn it.
  4. Stir in the leftover rice, breaking apart any remaining chunks while frying for about 3-4 minutes.
  5. Taste and adjust seasoning with more salt or chili oil if desired.
  6. Serve topped with fresh chopped cilantro.
