Ingredients

  • 1 cup fresh raspberries
  • 1/2 tablespoon maple syrup
  • 1/4 cup melted coconut oil
  • 1/4 cup cocoa powder
  • 2 tablespoons maple syrup (for the chocolate layer)
  • 1 tablespoon chia seeds


Instructions

  1. Line a muffin tin with silicone liners.
  2. In a pot, combine raspberries and maple syrup; simmer and mash until thickened. Stir in vanilla and chia seeds. Let cool.
  3. In a bowl, mix melted coconut oil, cocoa powder, and maple syrup until smooth.
  4. Pour chocolate mixture into the muffin liners and freeze until firm (about 5 minutes).
  5. Add cooled raspberry mixture on top of the chocolate layer and freeze again for another 5 minutes.
  6. Top with remaining chocolate mixture and freeze until fully set (approximately 2 hours).
  7. Store in the freezer until ready to serve.
