Ingredients
- 1 cup fresh raspberries
- 1/2 tablespoon maple syrup
- 1/4 cup melted coconut oil
- 1/4 cup cocoa powder
- 2 tablespoons maple syrup (for the chocolate layer)
- 1 tablespoon chia seeds
Instructions
- Line a muffin tin with silicone liners.
- In a pot, combine raspberries and maple syrup; simmer and mash until thickened. Stir in vanilla and chia seeds. Let cool.
- In a bowl, mix melted coconut oil, cocoa powder, and maple syrup until smooth.
- Pour chocolate mixture into the muffin liners and freeze until firm (about 5 minutes).
- Add cooled raspberry mixture on top of the chocolate layer and freeze again for another 5 minutes.
- Top with remaining chocolate mixture and freeze until fully set (approximately 2 hours).
- Store in the freezer until ready to serve.
