Chocolate Cake with Strawberry Filling and Ganache

This rich and moist chocolate cake is layered with a sweet homemade strawberry filling and finished with a smooth, glossy ganache. The deep cocoa flavor pairs perfectly with the fruity filling, creating a decadent dessert ideal for celebrations or special occasions.

Ingredients

For the Cake:
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup whole milk
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup boiling water

For the Strawberry Filling:
2 cups fresh strawberries, hulled and chopped
1/2 cup granulated sugar
2 tablespoons cornstarch
2 tablespoons water

For the Ganache:
1 cup heavy cream
1 cup semi-sweet chocolate chips


Instructions

  • Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the milk, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  • Carefully stir in the boiling water until the batter is thin and well combined.
  • Divide the batter evenly between the prepared pans.
  • Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool completely before assembling.
  • To make the strawberry filling, combine strawberries and sugar in a saucepan over medium heat. Cook until the strawberries release their juices.
  • Mix the cornstarch with water to create a slurry, then add it to the strawberries.
  • Cook for 3–5 minutes, stirring until thickened. Let cool completely.
  • To make the ganache, heat the heavy cream until just simmering, then pour it over the chocolate chips. Let sit for 2 minutes, then stir until smooth.
  • To assemble, place one cake layer on a serving plate and spread the strawberry filling evenly on top.
  • Add the second cake layer and pour the ganache over the top, allowing it to drip down the sides.
  • Let the ganache set slightly before slicing and serving.
