- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder

- 1 cup sugar
- 1 cup freshly grated zucchini (pressed to remove excess water)
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 tablespoons melted butter (for swirl)
- 1/4 cup sugar (for swirl)
- 1 tablespoon ground cinnamon
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan by lining it with parchment paper or lightly greasing it.
- In a bowl, combine flour, baking soda, baking powder, and salt.
- In another bowl, mix sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until well blended.
- Gradually add dry ingredients to wet mixture and stir until just combined.
- For the cinnamon swirl, mix melted butter, sugar, and cinnamon in a small bowl until smooth.
- Pour half of the batter into the prepared pan. Add half of the cinnamon mixture on top and swirl gently with a knife. Repeat with remaining batter and swirl.
- Bake for 45-55 minutes or until a toothpick inserted comes out clean.
- Allow cooling before glazing with powdered sugar mixed with milk.
