  • 2 tablespoons red curry paste
  • 2 limes (juice and zest)
  • 2 cloves garlic (minced)
  • 1 tablespoon grated fresh ginger
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish
  • 1 cup jasmine rice


Instructions

  1. Prepare all ingredients: Cut fish into chunks, mince garlic, and grate ginger.
  2. In a large skillet, heat oil over medium heat. Add red curry paste, garlic, and ginger; stir-fry until fragrant.
  3. Gently add fish pieces; cook until lightly flaked.
  4. Stir in coconut milk, lime juice, lime zest, salt, and pepper; let simmer on low heat for about 10-15 minutes until thickened.
  5. Meanwhile, rinse jasmine rice under cold water until clear. Boil water in a pot; add rice and a pinch of salt. Cover and simmer for 15-20 minutes until tender.
  6. Fluff rice before serving; plate curry over rice and garnish with cilantro.
