  • 3 cups cooked white rice
  • 2 cups shredded cooked chicken (or turkey)
  • 1 can cream of chicken soup (low-sodium)
  • 1 can French onion soup
  • 1 cup sour cream (or dairy-free yogurt)
  • 1 cup shredded cheese (mozzarella or Swiss)
  • 1 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste black pepper
  • 1/4 cup chopped parsley (for garnish)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, and half the cheese. Mix until well combined.
  3. Season with garlic powder, onion powder, salt, and black pepper; stir until evenly mixed.
  4. Transfer the mixture to a greased 9×13 inch baking dish and spread evenly. Top with remaining cheese and half the French fried onions.
  5. Bake for about 35 minutes or until bubbly and golden brown. In the last few minutes of baking, add the remaining fried onions on top for extra crunch.
  6. Let cool slightly before garnishing with chopped parsley and serving warm.
