  • 3 to 5 pounds ribeye roast
  • 1/2 cup balsamic vinegar
  • 2 garlic cloves (minced)
  • 1/4 cup cranberry sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • Salt to taste
  • 2 cups fresh cranberries


Instructions

  1. In a large re-sealable food storage bag, combine balsamic vinegar, minced garlic, cranberry sauce, brown sugar, and salt. Seal and mix well.
  2. Pierce the ribeye roast all over and place it in the marinade bag. Massage the marinade into the meat and refrigerate overnight.
  3. Preheat oven to 350°F (175°C). Sear the marinated roast in olive oil in a hot cast iron pan until golden brown on all sides.
  4. Pour remaining marinade and add fresh cranberries to the pan. Transfer to the oven and roast for about 20 minutes per pound or until a meat thermometer reads 140°F (60°C) for medium rare.
  5. Let it rest for 15 minutes before slicing and serve drizzled with pan sauce.
