  • 12 oz fresh cranberries (or leftover cranberry sauce)
  • 1 cup sugar (plus extra for the filling)
  • 3/4 cup water
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup butter (room temperature)
  • 1 beaten egg


Instructions

  1. Cook cranberries with sugar and water over medium heat for about 15 minutes until thickened; let cool.
  2. Combine flour, sugar, baking powder, and salt in a bowl. Cut in butter until crumbly and mix in the beaten egg.
  3. Preheat oven to 350°F (175°C). Press half of the crust mixture into a greased 9×13 inch pan. Spread cooled cranberry filling on top and sprinkle remaining crust mixture.
  4. Bake for about 40 minutes or until golden brown. Allow to cool completely before slicing.
