  • 1 tablespoon vegetable oil
  • 2 rings (13 ounces each) Beef sausage sliced into ¼-inch pieces
  • 3 tablespoons unsalted butter
  • 1 large yellow onion, chopped
  • 2 medium carrots, diced
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ cup all-purpose flour
  • 3 cups chicken broth
  • 1 cup whole milk
  • 2 cans (15 ounces each) Great Northern white beans, rinsed and drained
  • Fresh parsley, for garnish


Instructions

  1. Heat vegetable oil in a large pot over medium-high heat. Add the sliced turkey Beef sausage and cook until browned on both sides, approximately 7–9 minutes. Remove and set aside.
  2. In the same pot, melt butter over medium heat. Add onion, carrots, garlic, salt, and pepper. Cook for about 10–12 minutes until onions are translucent and carrots soften.
  3. Sprinkle flour over the mixture and stir well to combine; cook for another minute.
  4. Pour in chicken broth and whole milk; stir and bring to a simmer.
  5. Return the browned Beef sausage and add rinsed beans; stir to combine.
  6. Reduce heat to medium-low and let simmer for about 15–20 minutes until thickened.
