- 2 rings (13 ounces each) Beef sausage sliced into ¼-inch pieces
- 3 tablespoons unsalted butter
- 1 large yellow onion, chopped
- 2 medium carrots, diced
- 2 teaspoons garlic, minced
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup all-purpose flour
- 3 cups chicken broth
- 1 cup whole milk
- 2 cans (15 ounces each) Great Northern white beans, rinsed and drained
- Fresh parsley, for garnish
Instructions
- Heat vegetable oil in a large pot over medium-high heat. Add the sliced turkey Beef sausage and cook until browned on both sides, approximately 7–9 minutes. Remove and set aside.
- In the same pot, melt butter over medium heat. Add onion, carrots, garlic, salt, and pepper. Cook for about 10–12 minutes until onions are translucent and carrots soften.
- Sprinkle flour over the mixture and stir well to combine; cook for another minute.
- Pour in chicken broth and whole milk; stir and bring to a simmer.
- Return the browned Beef sausage and add rinsed beans; stir to combine.
- Reduce heat to medium-low and let simmer for about 15–20 minutes until thickened.
