- 1 can Rotel diced tomatoes with green chilies (10 oz, undrained)
- 1 can black beans (15 oz, drained and rinsed)
- 5 cups chicken broth
- 2 boneless skinless chicken breasts (or 2 cups shredded chicken)
- Cayenne pepper
- Cumin
- Hot sauce
- 1 oz. packet taco seasoning (about 3 tablespoons)
- 1½ cups shredded cheddar cheese
- ⅓ cup cream cheese (softened)
Instructions
- Sauté vegetables: In a large pot over medium heat, melt butter and add onion and jalapeno. Cook until softened, about 5-6 minutes. Stir in garlic for another minute.
- Combine ingredients: Add all remaining ingredients except cheeses. Start with about 2 tablespoons of taco seasoning.
