Ingredients
- 12 oz linguine pasta
- 1 1/2 lb boneless skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and freshly ground black pepper, to taste
- 3 cloves garlic, minced
- 1 small onion, finely diced
- 2 tbsp all-purpose flour
- 1 cup low-sodium chicken broth
- 2 cups heavy cream
- 4 oz cream cheese, cubed and softened
- 1 cup freshly grated Parmesan cheese
- 1 cup freshly grated Asiago cheese
- 1/2 cup freshly grated mozzarella cheese
- 2 tbsp chopped fresh parsley (optional)
Instructions
- Cook the linguine in salted boiling water according to package directions until al dente. Drain and set aside.
- Season chicken pieces with garlic powder, Italian seasoning, salt, and pepper.
- In a skillet over medium-high heat, heat olive oil and butter, then brown the seasoned chicken for about 4–5 minutes per side. Remove and keep warm.
- Add remaining butter to the skillet; sauté diced onion until softened, then add minced garlic.
- Stir in flour to create a roux; gradually whisk in chicken broth and cream until smooth. Simmer until thickened.
- Stir in cream cheese until melted; then add Parmesan and Asiago cheeses until fully melted and incorporated.
- Return cooked chicken to skillet along with linguine; toss to coat well with sauce.
- Serve hot, garnished with fresh parsley if desired.
