  • 12 oz linguine pasta
  • 1 1/2 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 3 cloves garlic, minced
  • 1 small onion, finely diced
  • 2 tbsp all-purpose flour
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 4 oz cream cheese, cubed and softened
  • 1 cup freshly grated Parmesan cheese
  • 1 cup freshly grated Asiago cheese
  • 1/2 cup freshly grated mozzarella cheese
  • 2 tbsp chopped fresh parsley (optional)


Instructions

  1. Cook the linguine in salted boiling water according to package directions until al dente. Drain and set aside.
  2. Season chicken pieces with garlic powder, Italian seasoning, salt, and pepper.
  3. In a skillet over medium-high heat, heat olive oil and butter, then brown the seasoned chicken for about 4–5 minutes per side. Remove and keep warm.
  4. Add remaining butter to the skillet; sauté diced onion until softened, then add minced garlic.
  5. Stir in flour to create a roux; gradually whisk in chicken broth and cream until smooth. Simmer until thickened.
  6. Stir in cream cheese until melted; then add Parmesan and Asiago cheeses until fully melted and incorporated.
  7. Return cooked chicken to skillet along with linguine; toss to coat well with sauce.
  8. Serve hot, garnished with fresh parsley if desired.
