  • 12 oz penne pasta
  • lbs boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 7 cloves garlic
  • 1¼ cups freshly grated Parmesan cheese
  • ¾ cup shredded mozzarella cheese
  • 1¾ cups heavy cream
  • ½ cup whole milk
  • Italian seasoning
  • dried oregano
  • salt
  • cracked black pepper
  • Fresh parsley or basil for garnish


Instructions

  1. Cook penne pasta in salted boiling water until al dente. Reserve a splash of pasta water before draining.
  2. Toss chicken pieces with half the salt, pepper, Italian seasoning, oregano, and Parmesan.
  3. In a skillet, heat olive oil and butter over medium-high heat; sear chicken until golden and cooked through. Remove from skillet.
  4. Lower heat; add remaining butter and minced garlic to skillet. Cook until fragrant.
  5. Stir in heavy cream and milk; let simmer until slightly thickened.
  6. Add cornstarch mixture to thicken the sauce further.
  7. Gradually mix in Parmesan and mozzarella until melted; adjust seasoning as needed.
  8. Combine cooked penne with sauce, adding reserved pasta water as necessary for desired consistency.
  9. Serve topped with chicken and fresh herbs.
