  • 3 large boneless, skinless chicken breasts
  • 1 lb spaghetti pasta
  • 1½ tablespoons olive oil
  • 6 tablespoons unsalted butter
  • 6 cloves garlic
  • 2¼ teaspoons Cajun seasoning
  • ¾ teaspoon Italian seasoning
  • ¾ teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 1½ cups heavy cream
  • ¾ cup low-sodium chicken broth
  • 4½ oz Velveeta cheese
  • ¾ cup shredded mozzarella cheese
  • ¾ cup shredded sharp cheddar cheese
  • ¾ cup shredded Provolone cheese
  • ¾ cup grated Parmesan cheese
  • 3 oz cream cheese
  • 3 tablespoons chopped fresh parsley


Instructions

  1. Cook spaghetti in a large pot of salted boiling water until al dente; drain and set aside.
  2. Season chicken with Cajun seasoning, smoked paprika, salt, and pepper. In a skillet over medium-high heat, heat olive oil and 3 tablespoons of butter. Sauté chicken until golden brown and cooked through, about 5–6 minutes. Remove from skillet.
  3. In the same skillet, reduce heat to medium and melt remaining butter. Sauté minced garlic until fragrant (about 30 seconds).
  4. Stir in chicken broth and heavy cream; bring to a gentle simmer while scraping browned bits from the pan.
  5. Add cream cheese and Velveeta, mixing until melted. Gradually stir in mozzarella, cheddar, Provolone, and Parmesan until smooth.
  6. Season sauce with Italian seasoning, salt, and pepper; let simmer for a few more minutes.
  7. Toss cooked spaghetti into the sauce mixture along with the chicken; combine well.
  8. Let rest over low heat for one minute before serving; garnish with fresh parsley.
