  • 2 cups butternut squash, peeled, seeded, and cubed
  • 1/2 lb turkey sausage, crumbled
  • 8 oz farfalle pasta (or your preferred shape)
  • 1 cup heavy cream
  • 6 oz fresh spinach
  • 1/3 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 4 garlic cloves, minced
  • salt and pepper


Instructions

  1. Preheat your oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for about 25 minutes until tender.
  2. Cook farfalle pasta in salted boiling water until al dente. Drain and set aside.
  3. In a skillet over medium heat, add olive oil and crumbled turkey sausage; cook until browned (5-7 minutes). Stir in minced garlic and spinach until wilted.
  4. Combine roasted butternut squash with the sausage mixture in the skillet. Pour in heavy cream and simmer for 3-5 minutes.
  5. Add cooked pasta to the skillet and toss gently to coat everything in the creamy sauce. Top with grated Parmesan before serving.
