  • 4 boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper (to taste)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • ½ tsp dried thyme
  • Fresh parsley (chopped) for garnish


Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken until golden brown on both sides; set aside.
  2. In the same skillet, toast rice for about 2 minutes. Add chicken broth and salt; bring to a boil. Reduce heat to low, cover, and simmer until rice is tender (18–20 minutes). Set aside.
  3. In another pan, melt butter over medium heat. Stir in flour to create a roux; cook for 1 minute. Gradually whisk in milk and additional chicken broth until smooth. Add spices and cheeses; stir until melted.
  4. Combine the cooked chicken with rice in the sauce; mix gently to combine and let simmer for an additional 5 minutes.
  5. Serve warm garnished with fresh parsley.
