Ingredients

  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced (or 3 Persian cucumbers)
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp honey or maple syrup
  • Salt and black pepper, to taste
  • Optional: 1/4 cup crumbled feta or goat cheese
  • Optional: 2 tbsp chopped fresh mint or basil
  • Optional: nuts/seeds for garnish


Instructions

  1. Wash and dry the strawberries and cucumbers thoroughly. Hull the strawberries and slice them into bite-sized pieces. Thinly slice the cucumbers into rounds.
  2. In a small bowl, whisk together lemon juice, honey, olive oil, salt, and pepper until well combined.
  3. In a large mixing bowl, combine cucumbers, strawberries, optional herbs, and cheese if using.
  4. Drizzle half of the dressing over the salad mixture and gently toss to coat.
  5. Transfer to a serving platter, top with nuts/seeds if desired, drizzle with remaining dressing, and serve immediately.
