  • 2 large eggs (flaxseed eggs can substitute)
  • 1 cup chocolate chips
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon (optional)


Instructions

  1. In a mixing bowl, combine flour, granulated sugar, instant yeast, and salt.
  2. In another bowl, whisk together warm milk, melted unsalted butter, and eggs until well combined.
  3. Gradually add the wet mixture to the dry ingredients and stir until a soft dough forms.
  4. Knead the dough on a lightly floured surface for about 5 minutes until smooth.
  5. Place dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat oven to 375°F (190°C) and grease a muffin tin.
  7. Roll out the risen dough into a rectangle about 1/4 inch thick. Spread softened vegan butter over the dough and sprinkle with brown sugar, chocolate chips, and cinnamon (if using).
  8. Roll up the dough tightly into a log and slice into equal pieces. Place each piece upright in the muffin tin.
