- 1 cup cooked quinoa
- 1 cup grated zucchini (squeezed dry)
- 1 cup grated carrot
- 1 can canned chickpeas (lightly mashed)
- 1 cup bell pepper (any color)
- 2 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 cup breadcrumbs (or gluten-free)
- 1 large egg (or flax egg)
- 2 tbsp olive oil (or cooking spray)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine cooked quinoa, grated zucchini, grated carrot, lightly mashed chickpeas, chopped bell pepper, soy sauce, garlic powder, onion powder, ground cumin, smoked paprika, salt, and pepper.
- Stir in breadcrumbs until well mixed. Add the egg or flax egg and mix until fully combined.
- Shape the mixture into equal-sized patties.
- Place patties on the prepared baking sheet. Drizzle with olive oil or use cooking spray.
- Bake for about 20 minutes or until golden brown on both sides.
