Ingredients
For the Chicken:
1 pound boneless, skinless chicken breasts or thighs
1/4 cup cornstarch
2 tablespoons vegetable oil
For the Sauce:
1 cup pineapple juice
1 cup pineapple chunks
1/2 cup brown sugar
1/4 cup soy sauce
2 tablespoons rice vinegar or apple cider vinegar
2 cloves garlic, minced
1 tablespoon ginger, grated
1 teaspoon salt
1/2 teaspoon black pepper
For Garnish:
2 green onions, sliced
Instructions
- Cut the chicken into bite-sized pieces and coat them evenly with cornstarch.
- Heat the vegetable oil in a large pan over medium-high heat.
- Add the chicken and cook until golden brown and cooked through, about 6–8 minutes. Remove and set aside.
- In the same pan, add garlic and ginger, sautéing for about 1 minute until fragrant.
- Pour in the pineapple juice, then add pineapple chunks, brown sugar, soy sauce, vinegar, salt, and pepper. Stir well.
- Bring the sauce to a simmer and cook for 5–7 minutes until slightly thickened.
- Return the cooked chicken to the pan and toss to coat in the sauce.
- Cook for another 2–3 minutes until everything is heated through and well coated.
- Garnish with sliced green onions and serve hot.
