  • 1 1/2 pounds strawberries, quartered or sliced
  • 1/3 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons cornstarch
  • 1/2 teaspoon vanilla extract
  • Pinch of kosher salt


Instructions

  1. Prepare the strawberries by slicing or dicing them. Set aside one-third of the strawberries.
  2. In a saucepan, combine two-thirds of the strawberries and sugar over medium heat.
  3. In a small bowl, whisk together lemon juice, cornstarch, vanilla extract, and salt until smooth. Add this mixture to the saucepan.
  4. Stir until boiling, then reduce heat and simmer for 4-5 minutes until thickened.
  5. Remove from heat and mix in the reserved strawberries.
  6. Allow to cool before transferring to an airtight container and refrigerating.
