- 2–3 tbsp olive oil, as needed
- 2 tbsp unsalted butter
- 5 large onions, thinly sliced
- 1 tsp brown sugar
- 1 tbsp fresh thyme leaves
- 4 garlic cloves, minced
- 1 tbsp Dijon mustard
- 1 tbsp tomato paste, optional
- 1 tbsp all-purpose flour
- 2½ cups beef broth
- 2 bay leaves
- 1 white baguette, sliced
- Olive oil, for brushing
- 1½ cups shredded Gruyère cheese
- 3 tbsp grated Parmesan cheese
- ½ tbsp fresh thyme, for garnish
Instructions
- Prepare and slice onions; set aside.
- Sear seasoned beef cubes in olive oil until browned; remove from pot.
- Caramelize onions with butter and brown sugar until golden; add garlic and thyme.
- Stir in flour, then gradually mix in broth and return beef to pot; bring to simmer.
- Slow-cook in the oven at 320°F for about 1½ hours until tender.
- Toast baguette slices brushed with olive oil; top with Dijon mustard and cheese.
- Assemble stew in bowls, cover with cheesy toast, and broil until cheese is melted.
