  • 1 tsp black pepper
  • 23 tbsp olive oil, as needed
  • 2 tbsp unsalted butter
  • 5 large onions, thinly sliced
  • 1 tsp brown sugar
  • 1 tbsp fresh thyme leaves
  • 4 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp tomato paste, optional
  • 1 tbsp all-purpose flour
  • 2½ cups beef broth
  • 2 bay leaves
  • 1 white baguette, sliced
  • Olive oil, for brushing
  • 1½ cups shredded Gruyère cheese
  • 3 tbsp grated Parmesan cheese
  • ½ tbsp fresh thyme, for garnish


Instructions

  1. Prepare and slice onions; set aside.
  2. Sear seasoned beef cubes in olive oil until browned; remove from pot.
  3. Caramelize onions with butter and brown sugar until golden; add garlic and thyme.
  4. Stir in flour, then gradually mix in broth and return beef to pot; bring to simmer.
  5. Slow-cook in the oven at 320°F for about 1½ hours until tender.
  6. Toast baguette slices brushed with olive oil; top with Dijon mustard and cheese.
  7. Assemble stew in bowls, cover with cheesy toast, and broil until cheese is melted.
