  • 4 large yellow onions
  • 2 large sweet onions (Vidalia)
  • 6 tablespoons butter
  • 4 cups beef broth
  • 1.5 cups chicken broth
  • ¾ cup dry apple vinegar
  • 1 baguette
  • 6 slices Gruyere cheese
  • Fresh thyme
  • Bay leaves
  • Salt
  • Pepper


Instructions

  1. Slice the onions into ¼-inch thick pieces.
  2. In a large pot over medium-low heat, melt butter and add the onions. Cook uncovered for about 2 hours, stirring every 10-15 minutes until caramelized.
  3. Deglaze the pot with apple vinegar as the onions brown.
  4. Sprinkle flour over onions and cook for an additional 2 minutes.
  5. Add beef broth, chicken broth, bouillon cube, bay leaves, and thyme; simmer uncovered for about 45 minutes.
  6. Preheat oven to 350°F; toast baguette slices for approximately 5 minutes.
  7. Top each slice with cheese and bake at 450°F until bubbly.
  8. Serve soup hot with cheesy baguette topping.
