Ingredients
- 60 ml milk
- 120 ml water
- 21 g active dry yeast
- 50 g sugar
- 550 g Manitoba flour (or bread flour)
- 2 eggs
- 1 egg yolk
- 5 g salt
- 70 g unsalted butter
- 750 ml vegetable oil (for frying)
- 350 g chocolate spread
Instructions
- In a bowl, combine lukewarm milk, water, yeast, and sugar. Stir and let it froth for about 10 minutes.
- In a stand mixer bowl with a dough hook, add flour, eggs, egg yolk, salt, and the yeast mixture. Knead on low speed for 2 minutes before increasing to medium for another 6-8 minutes until smooth.
- Incorporate the butter and knead for an additional 3-4 minutes. Cover the bowl with cling film and let it rise at room temperature for about an hour.
- After rising, roll out the dough into a rectangle (20 cm x 60 cm), cut into triangles, and shape into croissants. Allow them to rise again until tripled in size (about 1-1.5 hours).
- Heat oil in a deep frying pan to 170 -180°C (340 -355 °F). Fry beignets in small batches until golden brown (about six minutes total).
- Dust with sugar and cinnamon while warm and fill with chocolate spread using a pastry bag.
