  • 1 box of puff pastry dough (2 sheets), thawed
  • 1 8-ounce block of cream cheese
  • 1 tablespoon sour cream
  • 3 tablespoons granulated sugar
  • 2 teaspoons lime juice
  • Lime zest from one whole lime
  • 2-1/2 teaspoons vanilla extract
  • Fresh blueberries and strawberries, rinsed and prepared
  • 3 tablespoons melted butter for brushing
  • Sanding sugar for topping


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Roll out thawed puff pastry on a floured surface; cut into rounds using a biscuit cutter.
  3. Score the edges lightly with a smaller cutter, then transfer to baking sheets lined with parchment paper.
  4. In a stand mixer, blend cream cheese, sour cream, sugar, lime juice, zest, and vanilla until smooth.
  5. Place two tablespoons of the mixture in the center of each round and top with fruit.
  6. Bake for 15-16 minutes until golden brown.
  7. Cool slightly before serving; garnish with lime zest if desired.
