- 1.5 lbs boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups panko breadcrumbs
- 4 tbsp butter
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/4 cup milk
Instructions
- Preheat the oven to 400°F (200°C). In a bowl, mix salt, pepper, garlic powder, onion powder, and paprika. Coat chicken pieces in the mixture.
- Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dip each piece of seasoned chicken into the flour, then egg, and finally panko breadcrumbs.
- Place the breaded chicken on a baking sheet lined with parchment paper and drizzle with olive oil. Bake for 20-25 minutes until golden brown.
- While baking, melt butter in a saucepan over medium heat and sauté minced garlic until fragrant. Add rice to coat in butter and pour in chicken broth; bring to boil.
- Reduce heat to low, cover, and simmer for about 18-20 minutes until rice is tender. Stir in heavy cream and grated Parmesan cheese until creamy.
