  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/4 cup milk


Instructions

  1. Preheat the oven to 400°F (200°C). In a bowl, mix salt, pepper, garlic powder, onion powder, and paprika. Coat chicken pieces in the mixture.
  2. Set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dip each piece of seasoned chicken into the flour, then egg, and finally panko breadcrumbs.
  3. Place the breaded chicken on a baking sheet lined with parchment paper and drizzle with olive oil. Bake for 20-25 minutes until golden brown.
  4. While baking, melt butter in a saucepan over medium heat and sauté minced garlic until fragrant. Add rice to coat in butter and pour in chicken broth; bring to boil.
  5. Reduce heat to low, cover, and simmer for about 18-20 minutes until rice is tender. Stir in heavy cream and grated Parmesan cheese until creamy.
