Ingredients

Scale
  • 2 teaspoons Active Dry Yeast
  • 1 cup Warm Water
  • 4 cups All-Purpose White Flour
  • 2 tablespoons Granulated Sugar
  • 1 teaspoon Salt
  • 1 cup Unsalted Butter
  • 1 large Egg (beaten, for egg wash)
  • 1 cup Chocolate Chips (for sweet filling)
  • 1 cup Chicken and Cheese (for savory filling)
  • 1/2 cup Almond Paste
  • 2 teaspoons Cinnamon

Instructions

  1. Combine warm water and active dry yeast in a bowl. Let sit until frothy.
  2. Mix flour, sugar, and salt in a stand mixer bowl. Add the yeast mixture and mix until dough forms.
  3. Knead on a floured surface for about 10 minutes until smooth. Shape into a ball, place in a greased bowl, and cover.
  4. Chill butter rolled into an even rectangle while dough rises for 1 hour.
  5. Roll out dough into a large rectangle, place chilled butter on one half, fold over, roll out gently, then fold into thirds. Chill and repeat two more times.
  6. Shape croissants by cutting triangles from the final dough sheet and adding fillings at the base before rolling up.
  7. Preheat oven to 400°F (200°C). Place croissants on lined baking sheets, brush with egg wash, and bake for 18–22 minutes until golden brown.
